Baked Sweet Potatoe // Pečen sladki krompir

A quick side dish or main dish, depending on how hungry you are. The colours rock and the taste is sweet. I'm sure the children will love it.

Ingredients (2 persons):

- 2 medium sweet potatoes (I had one smaller and one bigger)
- cherry tomatoes
- peppers, choose the colours so they fit in the dish (!)
- broccoli
- cottage cheese
- herb butter
- parmesan cheese
(- salami, for the non vegi version)

The how-to:

Easy peasy. I cleaned them and cooked them for half an hour like I would with normal potatoes - skin on. I cooked the broccoli for 5 minutes in boiling water.
I preheated the oven to 200 degrees C. I cut the sweet potatoes in half, put some herbal butter and cottage cheese on them and topped them with the vegetables. The outer layer was grated parmesan. I put them in the oven for 5 minutes for the cheese to melt.

Hitro kosilo, ki je lahko kot glavna ali stranska jed. Barve so žive in okus je sladkast. Otroci ga bodo oboževali.

Kaj rabimo?

- 2 srednje velika sladka krompirja (jaz sem imela enega manjšega in enega večjega)
- češnjev paradižnik
- paprike, izberi barvo, da paše k jedi (!)
- brokoli
- skuta
- zeliščno maslo
- parmezan
(- salama, za ne vegi varianto)

Kako narediti?

Zelo enostavno! Sladka krompirja sem oprala in kuhala za pol ure, kot običajno kuham krompir - z olupkom. Brokoli sem v vreli vodi kuhala 5 min.
Pečico sem prižgala na 200 stopinj C. Krompirja sem prerezala na pol, namazala z zeliščnim maslom in dala gor skuto ter zelenjavo. Na vrh sem naribala parmezan. V pečici sem ga pekla 5 minut, da se je sir stopil.
